Appropriately-Titled Post

Last week I...

 went shopping with some family...this little member of my family passed out on the way home after eating a blue sucker. Also, I bought my outfits for my engagement pictures, which we are taking on September 29. Yay!

made Oreo Cheesecake Cookies. They were good, but I scooped them too small and therefore baked them to a point at which they were not soft anymore. Lesson learned! The dough was delicious.

witnessed my sweet (5-year-old) puppy cuddling with both the kitties. I love animals!

 went out to eat at Logan's with Phillip, Beth, and Kevin. I even learned how to French twist my hair for the occasion, thanks to a Youtube tutorial I found on Pinterest (obsessed, y'all).

I also made an A on another nursing test. It was a pretty good week.

However, our cat Gorgeous has started the week off by being sick, but I think he's better now. It started my week off in a pretty bad way, so now I'm cleaning, baking, and trying to get caught up on studying so I can feel better.

Hope I can get around to doing some wedding planning, too. I really need to. Gotta do that and pass my LAST check-off on Thursday. What a week already!

Shouting It

So...I made an 88 on my first nursing test today!

I studied until I knew the material and I prayed a lot.  It paid off!

God is so good.

Also, I came across this image of a party for a nursing graduate on Pinterest yesterday, and it is the cutest thing ever! Here's hoping that me and all of my classmates make it through the next two years and become registered nurses.

Pinterest Love

Whoa...Pinterest. I just discovered it today, and I can't stop looking at it. This is terrible timing, because I have my first nursing test tomorrow. Maybe I need to block myself at least 20 uninterrupted minutes a day to get my fix.

What is Pinterest, you say? It's an online gallery of images that you can use to make your own virtual pinboards.

I love lists. I love pictures. I love planning and daydreaming. I'm officially obsessed.

My Pinterest page.  However, I have heard that the site messes up a lot, and it's already not showing a few of my boards that I created...here's hoping they come back soon.

Pies to End the Summer

Just to get some important things out of the way...

1) I'm engaged! :)
2) I'm attending nursing school.
3) I live in Starkville, MS again!

More on those items in another post, because this post will be devoted solely to pie! I have a dream...a dream that one day, I will update regularly enough not to have to tell you these things in list form!
But enough with the slacking blogger guilt. Let's talk about pie! The above pies are coconut pie and apple pie.

If you have never made a pie from scratch before, it is something you simply must try...even just once! There is nothing quite like homemade pie crust. Although, if you're like me, there is nothing like homemade pie DOUGH, either. It's a pretty amazing snack, but alas.

There are many pie crust recipes out there, but my favorite pie doughs are ones that use both butter and shortening. That way, the pie crust develops richness from the butter AND the light flakiness produced by shortening. If a pie crust recipe calls for butter or shortening only and I still want to use the recipe, I usually substitute a butter/shortening mixture in place of the single fat, unless they do a really great job convincing me to follow the recipe to a T.

After you have selected a recipe, make sure that all of the pie fats and liquids are very cold. Also, I use a food processor to mix my pie dough ingredients. Cutting in the fats by hand seems very time-consuming, and I am consistently able to produce fabulous pie dough using the food processor method.

Finally, make sure your pie dough is quite cold right before rolling it out, and don't be afraid to use generous sprinkles of flour to keep the crust from sticking to your work surface. Also, I prefer a French rolling pin when rolling out pie crusts.

Some pie crust recipes to lead you in the right direction:

This is my apple pie! I made it for a family Labor Day celebration last night, and I was very pleased with the results. I also used my very own recipe...I am not very experienced with recipe creation, so this was pretty exciting for me! One day, I will share it! A tip for now, though...you need to cook those apples before you put them in the pie, or else they will shrink and leave an unsightly gap between the filling and the crust. I cooked mine in a Dutch oven over medium heat for about 15 minutes.



 Do you like my pie bird? :) I saw them in Martha Stewart's magazine a while ago and loved them. A coworker eventually bought me a pair as a going-away present when I left Memphis, and I love them! Their purpose is to ensure proper ventilation of the pie and prevent dripping, which makes a huge mess.

Finally, the coconut pie is not my own recipe, but it sure is popular with the coconut lovers in my family!  I use the filling recipe for Rachael Ray's Coconut Chess Pie. Also, if you decide to make this filling, it doesn't seem like it will properly fill two pies, but it will.

Another tip: do not put hot filling into a cold pie crust before baking. It will melt the butter in the crust and then your crust will be tough/unflaky!

Although cake baking and decorating usually take up a lot of my baking time, I have found that there is just something special about pie baking. It makes me feel like I'm honoring previous generations...like I'm making my grandmother proud. Oh, and pie is also delicious.

Thank you, Memphis.

As many of you know, I have been living in Memphis since last summer.  In such a short time, Memphis has helped me to change my life for the better, and, for this, has earned a permanent place in my heart.

Since moving, I have experienced many amazing things...


 I got my first "big girl" apartment.  This was my first place living alone (at least for a little while)!  It looks a lot different than this now...much more like a home.  I've had hardly any problems living in this complex and have really enjoyed living here...minus the loud upstairs neighbors.  Having Phillip here didn't hurt, either. :)


I got a job as a baker at Muddy's Bake Shop, which has pretty much been the work experience of a lifetime.  I got to make delicious cupcakes, pies, and cookies during NORMAL working hours and hang out with some of the coolest co-workers I've ever had the pleasure of meeting.  I expanded my knowledge of baking immensely, and now I'm confident that I would love to have my own bakery someday.


 I visited the zoo (one of my favorite places) several times.  First, we went with Phillip's family and saw about half of it.  Recently, we went back for our anniversary and saw the rest.




We got to see Dane Cook at the FedEx Forum!


My friend Megan took me to see the Trans-Siberian Orchestra.  AWESOME.


I experienced some real snow days!  Mind you, I got my car stuck in the snow a few weeks after this, resulting in the worst 6 hours ever...moving along!


The food!  Oh, man...the food.  This was a pizza from Bosco's, the restaurant we went to for my birthday.  Delicious!  I highly recommend their strombolis.  Texas de Brazil, Soul Fish Cafe, MUDDY'S, Local Gastropub, Cafe Eclectic, Brother Juniper's, Blue Plate Cafe, Humdinger's, Abuelo's, Trolley Stop Market, Huey's, Bronte Bistro, YoLo, SWANKY'S, Young Avenue Deli, and Beauty Shop are just SOME of the amazing restaurants I have tried and loved since moving to Memphis.  And there are still so many more that I haven't tried.


I met The Pioneer Woman, my favorite blogger!  She had a book signing at Davis-Kidd, which an awesome bookstore that has been in Memphis for years now.  I hear it's in danger of closing, which saddens me.


Memphis has given me so much, and living here has made me incredibly happy.  However...life changes!  After living here for close to a year, I (we) have decided to move back to the place I lived when I started this blog...Starkville!  I know...crazy, right?!  Why?  I am going back to school...nursing school, specifically.  It's a lot cheaper to do that there, and we both miss our families very much.  Although I will miss Memphis very much, I am excited to move back.  Being close to our families again is worth all that I will be giving up here, and I believe in Starkville's potential to grow.  I hope to bring all of my entrepreneurial aspirations back with me and keep making cakes for people and (hopefully) open my own bakery one day.

Our last Memphis adventure will be this weekend...Beale Street Music Festival!  It'll be a good time.  It will never be this convenient to go again.  Sigh.  Memphis will always have a huge piece of my heart!  I have grown so much here, and I will never forget all that I have done, all that I've learned, and the people that I've met.


And there you have it...I'm moving yet AGAIN, but I'm pretty sure it's gonna be for good this time!  Life is grand.  God is good.

My Blogger Idol

Disclaimer:  I will be discussing an event that happened over a month ago.  However, this was an amazing night that deserves my reminiscence.

I MET PIONEER WOMAN!  See?


 One day, I would love for this little blog to be as versatile and interesting as hers.  This was at a Davis-Kidd Booksellers event for her new book, "Black Heels to Tractor Wheels: A Love Story."  My favorite part of PW's website has to be Pioneer Woman Cooks, though.  When I first discovered her blog, I was starting to become mildly interesting in cooking.  A few years later, I have made TONS of her recipes and have become inspired to constantly  expand my cooking horizons.  Now, if only I could meet Deb from smittenkitchen and Bakerella.




My mom got to meet her, too!  I was so excited.  We definitely bond over Pioneer Woman recipes.  While we were waiting in the very long line, we ate at the in-store restaurant, Bronte Bistro.  I had the fluffiest, most delicious spinach, artichoke, and red pepper quiche.  I have now devoted several Google searches to finding the secret of fluffy quiche...


And we even met Marlboro Man!  He was a soft-spoken gentleman.  He also posed with my friend Jess.  She turned an adorable shade of red.


It was a great night.  I wish I could have talked to Pioneer Woman a little big longer, but there were hundreds of people at the event.  I brought her a dozen Muddy's cupcakes as well, so I was representing!

Easy Spring Meal

Wow!  Life sure has been busy these past few months.  I thought I would get back into the swing of blogging by sharing an EASY favorite recipe with y'all!


 I'm talking about one of my favorite pastas:  Green Pea Alfredo.  You're probably thinking, "What's so special about that?"  And the truth is...I don't know.  It's just awesome.  It's pretty much on the same comfort food level as macaroni and cheese for me and Phillip.

First, boil 1 lb. of your favorite short pasta in generously salted water until al dente.  Next, add
3/4 lb.-1 lb. of frozen green peas into the pasta while water is still boiling.  Wait 2 minutes.  Drain pasta and peas.  Toss with 1/2 cup-3/4 cup alfredo sauce (jarred or a super easy homemade version), 2 teaspoons of garlic salt with parsley, and a dash of both black pepper and red pepper flakes.  That's it!  It's so easy, I almost feel lazy calling it a "recipe."

Of course, you can add any of your favorite spices or meats to personalize it.  Some of our favorite additions are diced green onions, caramelized onions, grilled shrimp, and chicken.

And those scrumptious-looking tomatoes?  Pastor Ryan's Roasted Ricotta Romas.  The only change I made to the recipe was adding about 1/4 cup of shredded mozzarella to the cheese mixture.  Mmmmm.  Such a yummy spring side dish...or main dish, if you like these as much as I do.  However, I would like the tomatoes to be firmer after roasting, so the next time I make them, I'm thinking I may roast the tomatoes sans cheese mixture for about 5-10 minutes before adding the mixture to the middles.

$$$$$$$$

Well, I have recently fallen into the cult of couponing!

Is it easy?  NO!  But so far, it has been pretty rewarding...and maybe, just MAYBE, a little, tiny bit fun.

At first, I didn't understand why people even bothered with coupons.  They are usually for expensive items that still don't match up to the store brand's prices even after a coupon.  But after talking to a few people and reading a few blogs, I gradually got the idea that coupons are generally for items that are already on sale, or for items that will bring you some type of reward just for buying them.

I have now realized the importance of looking to see what is on sale.  I just finished my first coupon excursion at Kroger yesterday.  I made a list of things I absolutely had to have and things that were on sale that I thought I would enjoy or thought I would use in the future.  I do not have the space to stockpile things at the moment, so that was out of the question.  But...I ended up buying $131.75 of groceries for $96.13, which is a savings of 27%!  I know...it's not too much yet.  But I hope to keep looking through our local ads every week and trying to match them with my ever-growing pile of coupons (which I need to organize somehow) to save us some money!  Two small snags we encountered in our experience: 1) Assuming that some fruits and vegetables are in packaged in one-pound increments.  2)  We intended to buy sliced cheese that was on sale, and we picked up the wrong brand, which was not on sale.

Yes, is is time-consuming so far, but I hope as time goes on, I will get a lot faster at this and that it will be well worth it.  My eventual savings goal for grocery trips: 40-50%!

O, Snowy Night!


It snowed in Memphis last night!  This photo was taken not too long after it started.  Much more came after this!

Why do I care?  I'm originally from Mississippi.  It NEVER snows there!  Well, except for this year.  Before last night, I had never...


made a snow angel, or...



made a snowman named Lester, or...



eaten snow cream (which was delicious), or...



witnessed my dog prancing around in this unfamiliar icy whiteness!


Obviously, I was happy!  Something about the snow made me feel like a child again.

After Phillip and I played outside for a while, we went back inside to enjoy a game of Monopoly...and I LOST!  All I can say is that I handled it better than I thought I would.  He had better watch his back next time, though...because I'm feeling pretty fierce about it.

Happy Snow Day, everyone!  It was nice to get a taste of what northern states get to experience all the time.  The snow is melting now, and it's back to the normal routine tomorrow!

Here's to 2011.

After a lovely 10-day break from work, here I am in 2011.  Although I am excited about returning to work tomorrow, I have very  much enjoyed my break and there are still things I wish I had done!


My break was pretty much a whirlwind.  We started things off on Christmas Day with Phillip's family.  Great day!  We got to see all four of his amazing nieces and nephews, and I truly treasure my time with them (and the rest of his family, of course!)  After a meal at his grandmother's house, we returned to his house for the rest of the day.  We gave out gifts of homemade treats (toffee squares, spritz cookies, and brownie-covered oreos), and I received a beautiful garnet necklace, a set of pinch bowls, and an apple corer/slicer/peeler!  I definitely see more apple pies in our future.  As you can see, I have definitely not resolved to start a diet in the new year!


After returning to Memphis for a few days, I went back to my hometown for Christmas with my dad's family.  We went to my grandmother's house for present-opening and lunch, and it was so nice to just relax with them.  My grandmother also gave me some old pieces of silver, which I am now using as a centerpiece for my dining room table.


The next day, I went to a Christmas celebration for my mom's family at the cabin.  The cabin is my family's hunting cabin that we all gather in for special occasions, and it's also special to me because it sits in the spot where my family and I once lived.  I got to see my grandparents and the children I love in my own family, and also got to enjoy some great appetizers, which I have no problem making a meal of.


I came back to Memphis again on New Year's Eve, just in time to celebrate with Phillip!  I fixed up some black-eyed pea dip and some Mexican cornbread, and we watched Beauty and the Beast on DVD...yes, we're old and boring, and we don't care!  It was exactly what I wanted.


The next days have consisted of taking care of a sick puppy (he's fine now!), watching the Gator Bowl, cleaning and organizing the apartment, watching more movies, going out to eat with my dad's family at O'Charley's...and now I'm here, blogging.


Of course, I'm going to tell you what my resolutions for 2011 are.  One resolution has been ongoing for a while now...get out of debt!  I want to completely rid myself of ANY debt, including student loans.  I'm almost positive I won't be able to accomplish that goal this year, but I CAN make significant strides toward it.  I am a big fan of Dave Ramsey, and I'm going to continue applying his financial principles to my life until I am finally where I want to be financially.


Another resolution I have is to account for every single one of my pictures.  I have around 1,500 pictures that I have never even developed, and many more that aren't in photo albums or scrapbooks.  I also want to properly organize them on my computer and back up the files.  This resolution will probably be expensive/time-consuming, but I will feel so much better when it's done!


Last...I want to further foster my spirituality and become more full of love and peace.  Pretty broad goal, I know!  Phillip received a hard-cover copy of The Shack (his favorite book) as a gift, and I finished reading it yesterday.  However controversial the book's theology may be, I truly enjoyed the book and was inspired not only to work on my relationship with God, but with others.


I tried not to have too many resolutions so that I can focus more on each one of them.  That's what seems to work best for me every year, as opposed to making 10-20 like I used to!  I wish I could remember who said this many years ago when I heard it, but I can't...instead of making many resolutions, I try every day to be a little bit better than I was the day before.
