Um, food and stuff.

I made a couple of yummy things on New Year's Day, if I do say so myself! I made Pioneer Woman's Zannie's Black-Eyed Pea Dip, which will be the 4th time I have made this for New Year's. It's pretty much a tradition now! I eat it with tortilla chips. Also, I always use canned black-eyed peas with  jalapenos already in them so I can skip the step of adding chopped jalapenos.



Zannie's Black-Eyed Pea Dip (from pioneerwoman.com)

Ingredients

  • 1 can (14-ounce) Can Black-eyed Peas
  • 1/4 whole Onion, Chopped Fine
  • 1/4 cup Sour Cream
  • 8 slices Jarred Jalapenos
  • 1 cup Grated Sharp Cheddar Cheese
  • 3 Tablespoons Salsa
  • Hot Sauce, to taste
  • Salt And Black Pepper To Taste

Instructions

  • Preheat oven to 350 degrees. Drain black-eyed peas and partially mash, leaving some whole.
  • Add all other ingredients, stirring to combine.
  • Spread into a 1 1/2 quart baking dish and bake for 20 to 30 minutes until hot and bubbly.
  • Serve with tortilla chips!

Next, I made Jalapeno Popper Pizza. This was AWESOME. Only improvement I could make: more bacon! I used this pizza crust recipe, and I started with one cup of white all-purpose flour and used white whole-wheat flour for the remaining flour. I usually make pizza crust with the dough hook on my Kitchen-Aid. So easy!

Ingredients
  • 2 tablespoons olive oil
  • 4 slices bacon, chopped
  • 2 jalapeños, sliced
  • 1 shallot, sliced
  • 1/4 cup semolina or yellow cornmeal
  • 1 ball pizza dough, homemade or store-bought
  • 6 ounces cream cheese, softened
  • 1 1/2 cups grated jalapeño monterey jack cheese
Instructions
  • Preheat oven to 475 degrees F. Lightly coat a baking sheet or pizza pan with olive oil.
  • Heat a small skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
  • In a small bowl, combine the jalapeños and shallot with 1-2 teaspoons olive oil.
  • Working on a surface that has been sprinkled with semolina or cornmeal, roll out the pizza dough into a 10-inch-diameter round. Transfer to prepared baking sheet or pizza pan.
  • Spread the cream cheese evenly over the top, leaving a 1-inch border. Top with jalapeño monterey jack, jalapeños, shallots and bacon.
  • Place into oven and bake for 15-20 minutes, or until the crust is crisp and brown on the bottom and the cheese is melted on top.
  • Cut the pizza into wedges and serve immediately.
There you have it! Maybe one day I will come up with a few of my own recipes to share. However, with a collection of 20+ cookbooks, several huge Pinterest food boards, a reading list full of talented food bloggers, and a foodgawker collection of over 600 recipes...that might be difficult ;) I would be happy to just be able to inspire more people to cook at all.

One of my biggest goals for 2014 is a goal I have had for several years: eat less and less processed foods. I have made some pretty significant strides, but I still have a long way to go. One of my favorite resources is 100 Days of Real Food. And she has a cookbook coming out this year! One of the best ways to avoid processed foods is to make most of your own food (no-brainer, huh?) But I try to go a little bit further than that...like by making my own cream soup instead of buying cream-of-whatever from a can. I use this recipe for my homemade cream soup. However, the recipe calls for chicken bouillon cubes, which is something I would try to avoid when cutting out processed foods. So, I omit them and use chicken stock instead of water to reconstitute the soup. I've never made my own chicken stock, but I've got my eye on this recipe from one of my food idols, Deb from smittenkitchen.

Some of my biggest processed food weaknesses that I'm trying (but currently failing) to give up: Philly Cheesesteak Hamburger Helper, white pasta, frozen pizza, gummy fruit snacks, and breakfast cereal. I got hungry just reading that list...

2014, HEEEEY!

So, I decided that I wanted the first meal I made in 2014 to be something tasty, yet fabulously healthy, so I decided to make chickpea pesto sandwiches for lunch today. I got my husband a gym membership for Christmas that he has been rather enthusiastic about, so I figured he would appreciate all the protein and fiber in this meal. I appreciated the deliciousness. This recipe is from one of my new favorite food blogs: thugkitchen.com (basically, a gangsta vegan chef). However, if you don't find...uh...colorful language even remotely funny, you might want to stay away from that site. HA! Anyway, these sandwiches were delicious. The only changes I made: I crisped up a couple of pieces of turkey bacon in the microwave for each sandwich and I added 2 chopped green onions to the chickpea spread. Phillip says these are also delicious in a whole-wheat wrap.

Pesto action. Mmmmmm.

Finished product! I used some yummy whole-wheat bread (I know, tsk-tsk for not making my own). Snack: grapes and Mississippi State cheddar cheese. In the same bite. Don't judge until you try it...it's delicious!


CHICKPEA PESTO SANDWICH (slightly adapted from thugkitchen.com)
Pesto:
1 ¼ cup torn, packed basil leaves
1/3 cup slivered or sliced almonds
2 tablespoons olive oil
2 tablespoons water
1 tablespoon lemon juice
½ teaspoon lemon zest
½ teaspoon salt
2-3 cloves of garlic, chopped

Mix this in after the pesto is done:
1 ½ cups cooked chickpeas (or one 15 ounce can)
1 carrot, grated
 2 green onions, chopped (nope, chives and green onions aren't the same thing.)

Put all the ingredients for the pesto in a food processor and blend until smooth. 
Throw the chickpeas in the food processor with the pesto and pulse a few times until you are happy with the texture. I like a few chunks in mine. Mix the grated carrot in with the chickpea paste.
Top sandwich or wrap with whatever (I used turkey bacon, Roma tomatoes, and red onions). Except mayonnaise. That would be blasphemous on this sandwich!

Makes 3 sandwiches.

Appropriately-Titled Post

Last week I...

 went shopping with some family...this little member of my family passed out on the way home after eating a blue sucker. Also, I bought my outfits for my engagement pictures, which we are taking on September 29. Yay!

made Oreo Cheesecake Cookies. They were good, but I scooped them too small and therefore baked them to a point at which they were not soft anymore. Lesson learned! The dough was delicious.

witnessed my sweet (5-year-old) puppy cuddling with both the kitties. I love animals!

 went out to eat at Logan's with Phillip, Beth, and Kevin. I even learned how to French twist my hair for the occasion, thanks to a Youtube tutorial I found on Pinterest (obsessed, y'all).

I also made an A on another nursing test. It was a pretty good week.

However, our cat Gorgeous has started the week off by being sick, but I think he's better now. It started my week off in a pretty bad way, so now I'm cleaning, baking, and trying to get caught up on studying so I can feel better.

Hope I can get around to doing some wedding planning, too. I really need to. Gotta do that and pass my LAST check-off on Thursday. What a week already!

Shouting It

So...I made an 88 on my first nursing test today!

I studied until I knew the material and I prayed a lot.  It paid off!

God is so good.

Also, I came across this image of a party for a nursing graduate on Pinterest yesterday, and it is the cutest thing ever! Here's hoping that me and all of my classmates make it through the next two years and become registered nurses.

Pinterest Love

Whoa...Pinterest. I just discovered it today, and I can't stop looking at it. This is terrible timing, because I have my first nursing test tomorrow. Maybe I need to block myself at least 20 uninterrupted minutes a day to get my fix.

What is Pinterest, you say? It's an online gallery of images that you can use to make your own virtual pinboards.

I love lists. I love pictures. I love planning and daydreaming. I'm officially obsessed.

My Pinterest page.  However, I have heard that the site messes up a lot, and it's already not showing a few of my boards that I created...here's hoping they come back soon.

Pies to End the Summer

Just to get some important things out of the way...

1) I'm engaged! :)
2) I'm attending nursing school.
3) I live in Starkville, MS again!

More on those items in another post, because this post will be devoted solely to pie! I have a dream...a dream that one day, I will update regularly enough not to have to tell you these things in list form!
But enough with the slacking blogger guilt. Let's talk about pie! The above pies are coconut pie and apple pie.

If you have never made a pie from scratch before, it is something you simply must try...even just once! There is nothing quite like homemade pie crust. Although, if you're like me, there is nothing like homemade pie DOUGH, either. It's a pretty amazing snack, but alas.

There are many pie crust recipes out there, but my favorite pie doughs are ones that use both butter and shortening. That way, the pie crust develops richness from the butter AND the light flakiness produced by shortening. If a pie crust recipe calls for butter or shortening only and I still want to use the recipe, I usually substitute a butter/shortening mixture in place of the single fat, unless they do a really great job convincing me to follow the recipe to a T.

After you have selected a recipe, make sure that all of the pie fats and liquids are very cold. Also, I use a food processor to mix my pie dough ingredients. Cutting in the fats by hand seems very time-consuming, and I am consistently able to produce fabulous pie dough using the food processor method.

Finally, make sure your pie dough is quite cold right before rolling it out, and don't be afraid to use generous sprinkles of flour to keep the crust from sticking to your work surface. Also, I prefer a French rolling pin when rolling out pie crusts.

Some pie crust recipes to lead you in the right direction:

This is my apple pie! I made it for a family Labor Day celebration last night, and I was very pleased with the results. I also used my very own recipe...I am not very experienced with recipe creation, so this was pretty exciting for me! One day, I will share it! A tip for now, though...you need to cook those apples before you put them in the pie, or else they will shrink and leave an unsightly gap between the filling and the crust. I cooked mine in a Dutch oven over medium heat for about 15 minutes.



 Do you like my pie bird? :) I saw them in Martha Stewart's magazine a while ago and loved them. A coworker eventually bought me a pair as a going-away present when I left Memphis, and I love them! Their purpose is to ensure proper ventilation of the pie and prevent dripping, which makes a huge mess.

Finally, the coconut pie is not my own recipe, but it sure is popular with the coconut lovers in my family!  I use the filling recipe for Rachael Ray's Coconut Chess Pie. Also, if you decide to make this filling, it doesn't seem like it will properly fill two pies, but it will.

Another tip: do not put hot filling into a cold pie crust before baking. It will melt the butter in the crust and then your crust will be tough/unflaky!

Although cake baking and decorating usually take up a lot of my baking time, I have found that there is just something special about pie baking. It makes me feel like I'm honoring previous generations...like I'm making my grandmother proud. Oh, and pie is also delicious.
